Winter Warmer Lentil Soup
Ingredients 1 tbsp Border Fields rapeseed oil 1 tsp fresh grated ginger 1 tsp cumin seeds 1/4 tsp chili powder (or to taste) 1 onion - chopped 2 carrots - finely chopped or grated 150g red lentils 1L vegetable stock or water
Method
Heat the Border Fields oil in a pan and fry the ginger and spices for a
couple of minutes; add the onions and carrots, fry until soft and then
add the lentils. Add the stock, bring to the boil and simmer for
approx. 20-30 minutes until soft. Break up with a wooden spoon for a
chunkier texture or blend until smooth if preferred.
