Christmas Mincemeat Cake
Ingredients 5oz (125g) soft butter 5oz (125g) caster sugar 2 free range eggs 8oz (225g) self raising flour 30z (75g) sultanas 3oz (75g) ground almonds 1lb (450g) Homemade Christmas Mincemeat (see recipe) Flaked almonds & handful of demerara sugar for the topping
Method Cream the butter and sugar together. Mix in the eggs and the flour and fold in the remaining ingredients. Pour into a greased and lined 2lb loaf tin, sprinkle over the topping and bake for one and a half hours in an oven at 150 degrees C or equivalent.
