Summer Vegetable Bake
Ingredients: 500g tomatoes (choose a variety with flavour or homegrown) 250g courgettes 250g potatoes 1 large onion, chopped 2 tbsp fresh herbs, finely chopped 50g cheese grated, such as strong cheddar 2-3 tablespoons of Border Fields Cold Pressed Rapeseed Oil
Method: Slice the vegetables about 1/2cm thick and arrange in mixed layers in an overproof dish. Sprinkle over the herbs, add the Border Fields Cold Pressed Rapeseed oil evenly and finally sprinkle over the cheese.
Bake for about 50-60 mins until golden brown at 180 degrees c or equivalent.
