Lemon & Garlic Chicken
Ingredients
4 chicken fillets - skinned and cut into strips 1 tbsp plain flour 2 tsps of Border Fields Rapeseed Oil 1 onion - finely chopped 1 garlic clove - finely chopped 1 leek - thinly sliced 1 tsbp fresh coriander - finely chopped 1 lemon Fresh ground black pepper
Method
Season the flour with freshly milled black pepper according to taste
and use this to lightly coat the chicken pieces. Heat the Border Fields
Rapeseed Oil in a pan and saut?© the onion and garlic for a few minutes
then add the chicken and brown the meat.
Stir the leeks and coriander into the pan together with
four slices of lemon and the juice from the remaining fruit. Cover and
cook for fifteen minutes on a medium heat adding a little water if
necessary.
Cook the rice according to instructions so that is it
ready at the same time as the chicken and serve the strips on top of
the rice with a lemon slice.
